Dark- Colombia Organic Sierra Nevada Fair Trade Organic Santa Maria

This bean hails from the Caquetá reigon of Colombia by the ASOBRIS producer association (Asociación de Productores Agrícolas Ecológico y Pecuarios Brisas del Quebradon). It is a small collective (42 members) that focuses on sustainable practices.

These beans are cultivated at an altitude between 1500 and 1800 meters above sea level. They are mechanically depulped and fermented for 18-24 hours. They are then washed, wet milled, and paito dried before solar dryers finish the drying process.
